One of our overarching farm philosopies in making our cheeses is to use our native plant material from our native plant nursery. It is our way of connecting our sustainable landscapes program to our sustainably managed goat dairy and artisan cheese production. The cheeses we have chosen for this collection are Red Leaf, Nutcracker, Berry Good and Mellow Yellow. Red Leaf is aged using a Sycamore tree leaf that has been marinated in red wine. Nutcracker is marinated in a black walnut liqueur that is made from the fruits of our black walnut trees(another native tree). Mellow Yellow is made from our saffron and has a fantastic and creamy texture to it. Berry Good is infused with our Native Elderberry fruits. The total collection will include one piece of each of 3 of the best cheeses depending on availability in a 1/2lb portion for a total of 1.5lbs of cheese in the collection. What better way to celebrate the farm-to-table experience!
