Bring large pot of water to a boil. Cut zucchini in half lengthwise. Blanch in boiling water for 3-5 minutes. Drain well.Scoop out pulp, leaving about 1/4 inch with shell. Chop pulp, and mix with cheese, and bread crumbs.
Place zucchini in broiler pan, hollowed side up. Fill each shell with cheese mixture. Top each shell with your choice of toppings , such as herbs, pine nuts and/or crumbled bacon.
Broil until it is browned--3-5 minutes. Serve warm.
