Ingredients

2 cups
Couscous
1 cup
Roasted Tomatoes
1  
Cucumber
4  
Scallions
1⁄2 cup
Fresh Mint Leaves
3 tablespoons
Lemon Juice
1⁄2 cup
Olive Oil
4 ounces
Berry Good Cheese

Instructions

Put freshly cooked couscous in a large bowl. Season with salt and pepper. Add all ingredients except cheese. Toss and stir well. Add cheese and gently stir until all combined evenly.
