Baked Zucchini and Eggplant Casserole

Description

This simple side dish is great for dinners and parties.

Ingredients

1⁄2  
Medium Zuchinni
1  
Small Eggplant
1⁄4 cup
Onion
2 cloves
Garlic
1⁄4 cup
Dry Red Wine
1 cup
Tomato Sauce
4 ounces
Goat-za-rella
   
Salt and Pepper

Instructions

Preheat oven to 350F. Grease a 1 qt. baking dish.

In skillet, heat olive oil on medium-high. Saute vegetables until tender – about 10 – minutes. Stir in garlic, tomato sauce, wine, salt and pepper and continue blending over medium heat for about 5 minutes.

Transfer to baking dish. Top with grated Goat-za-rella and cover with foil. Bake for 20-30 minutes.  Remove foil, and bake for 10 minutes more , or until cheese is bubbly.

Serves 2-3 people for side dish.
