Ingredients

4  
Large Apples
1 cup
White Wine
1  
Dry Bay Leaf
   
Sea Salt
2 tablespoons
Unsalted Butter
2  
Large Leaks
2 tablespoons
Water
4 ounces
Goat Cheese
2 tablespoons
Heavy Cream
   
Black Pepper
   
Parsley

Instructions

Be sure to strip a piece of skin from the apple to prevent it bursting when baked.

Pre heat oven to 400 degrees

Place apples in baking dish and pour wine around them. Add bay leaf to wine. Lightly salt apple inside.

Place butter and leeks in pan and cook/stir until leeks turn transparent. Add water and cover the pan. Continue cooking until leeks are tender. Add water if needed to prevent leeks from sticking.

Transfer leeks to mixing bowl and add cheese and cream and stir until fully mixed. Season with salt and pepper.

Gently stuff each apple with mixture and mound on top. Top each apple with remaining butter.

Bake in pre-heated oven approx. 40/45 min. until goat cheese is golden brown on top. Remove from oven and transfer each apple to warmed plates and garnish with parsley.

Serve immediately.
