Yellow Springs Farm Wins Record Five Awards at Annual ACS Cheese Conference
YSF cheeses honored for its goat cheese and yogurt at annual event held in Pittsburgh, PA July 25 – 28
Chester Springs, PA – August 2, 2018 – Yellow Springs Farm LLC (YSF), a family farm business focused on selling artisanal goat cheeses to local communities, regional retailers and restaurants, announced today that it won the following awards for its goat cheeses:
• First place for Pickering;
• Second place for its Blue Velvet and Pepito;
• Third place for Goat’s Beard; and
• YSF was also honored with an all-around second-place award for its plain goat’s milk yogurt.
The judging took place at the annual American Cheese Society (ACS) Conference this past weekend in Pittsburgh, Pennsylvania. Yellow Springs Farm produces a wide range of artisanal goat cheeses and yogurts from its dairy farm in Chester Springs, Pennsylvania. The American Cheese Society is a not-for-profit trade organization founded in 1983 to support the North American artisan and specialty cheese industry. The diversity of cheeses was represented by 1,954 entries of cheeses and cultured dairy products from 259 companies at this year’s annual conference. "This year's competition once again featured the very best cheeses and cheesemakers in the Americas," said Nora Weiser, ACS executive director.
“We are thrilled to have four of our cheeses win ACS awards this year, but especially proud that our plain goat’s milk yogurt was awarded second place overall,” said Catherine Renzi, Co-owner, Yellow Springs Farm. We are very excited that Pickering, one of our newest cheeses, received top honors for the second time this year,” stated Renzi. Pickering, aged in the Alpine tradition in a 19th-century stone bank barn recently won a blue ribbon at the 2018 PA Farm Show Cheese Competition – it is named in honor of Pickering Creek, the high-quality watershed where the farm is located and a percentage of the proceeds are donated to help Valley Forge Trout Unlimited preserve precious cold-water resources.
About the rest of the ACS Winning Cheeses from Yellow Springs Farm
-Blue VelvetTM is a goat milk blue cheese made with some reference to Gorgonzola. It is creamy and has unique, complex layers of flavor.
-Goat’s BeardTM is less sweet than a Gouda, but made with similar inspiration - this mild aged goat milk cheese is firm, with crisp flavors, including hints of honey and butter.
-PepitoTM is a cheese made with peppercorns. Pepito is unique because we use goat milk, and age the cheese slowly in our stone cave. The natural rind is edible.
